How To – assemble the spinach and feta filo pie from 30-Minute Meals


00:00:04hi I’m Georgie from Jamie’s food team

00:00:07and I’m going to show you how to

00:00:08assemble a fool a pie so here I’ve got a

00:00:11bowl of feta and spinach mixture that

00:00:13I’ve made for my pie

00:00:14got some pine nuts and cheese in there

00:00:16and we’ve done is I’ve got 50 centimeter

00:00:19piece of grease proof paper which I’ve

00:00:21scrunched up with some olive oil and

00:00:23then I’ve layered up layers of phyllo

00:00:25pastry four squares each time and then

00:00:29in between the layers I’ve just drizzle

00:00:31some olive oil salt and pepper and

00:00:33linking of cayenne pepper as well just

00:00:34to give a bit of flavour it’s about

00:00:36three or four layers here what we’re

00:00:38going to do is we’ll transfer the whole

00:00:40lot over to the frying pan okay so just

00:00:43a transfer the squeeze proof paper over

00:00:45this pan here and it’s gently using your

00:00:47hand just push it in don’t worry about

00:00:50the overhang will fall back over

00:00:51afterwards just ease in like that this

00:00:56is a cap this is a great trick and you

00:00:59could do this any pie filling all in one

00:01:00pan which you just popping it up and

00:01:02make sure your pans got oven proof

00:01:04handle then get your mixture just give a

00:01:06little stir so it’s been sitting it’ll

00:01:08probably have separates a little bit and

00:01:10just spoon or pour into your pastry case

00:01:17and then just spread it out like that

00:01:22excellent then what we do now is we’re

00:01:26just going to get the excess pastry and

00:01:32just don’t worry about being too neat or

00:01:34tidy it’s nice have a bit of an open

00:01:38sense as you can see the middle as it’s

00:01:40cooking and just gently fold over

00:01:43scrunch in and around it’s high

00:01:49I’m just gonna put this on a medium heat

00:01:52what you want to do is you want to crisp

00:01:54it up the pie from the underneath once

00:01:56it goes in the oven it will click on top

00:01:58lovely but you want to make sure the

00:01:59bottom is lovely and crisp and golden as

00:02:01well so just leave it on here for a

00:02:03couple of minutes get the pan warmed up

00:02:05everything ready to go and then I’m just

00:02:07going to pop it in the oven got the oven

00:02:10on 200 degrees and I only need about

00:02:121820 minutes
