Jamie Oliver on using herbs

00:00:03herbs are absolutely at the cornerstone

00:00:07of all genius cooking they’re absolutely

00:00:10the cornerstone of all historic medicine

00:00:13if you have herbs in your cooking you

00:00:17have more flavors and sensations and

00:00:19dynamism in your cooking it doesn’t

00:00:22matter if you live on the 40th floor of

00:00:25a block of flats it doesn’t matter if

00:00:26you’ve got no garden at all you’ve got a

00:00:28veranda maybe you haven’t even got up

00:00:29around and maybe just got a windowsill

00:00:31fresh herbs at the very least down the

00:00:36market are the minimum so in this part

00:00:38of Europe with soft herbs basil tarragon

00:00:41chervil coriander parsley all of these

00:00:45little soft herbs are quite fragile so

00:00:47you kind of have to restart them every

00:00:49year but woody herbs times oregano bay

00:00:55leaves sage rosemary these are Hardy

00:00:59they’ll grow pretty much all year round

00:01:01they’ll die back a little bit in the

00:01:03winter you buy a pot for one pound fifty

00:01:05two pound three pound depending on the

00:01:07size and you’ve pretty much got it for

00:01:10life because you can take cuttings and

00:01:11replant it so what I’m saying to you is

00:01:13go buy some herbs especially the woody

00:01:16ones which a great value well behaved

00:01:18they kind of do what they got to do but

00:01:21if you can get me in a bigger pot or at

00:01:22least change the soil regularly they’re

00:01:24gonna do well these herbs can really

00:01:27rock rock your cookin go for it get into

00:01:31it and and again just because I’m

00:01:34sitting in a bunch of herbs and flowers

00:01:35does not mean I’ve gone mad this is

00:01:38serious this is what cooking is all

00:01:40about make it easy for yourself
