00:00:06gimmicks and gadgets on the market to
00:00:08sharpen your knives but the best all is
00:00:11a steel is the original best idea really
00:00:13all it is is a piece of metal with
00:00:15ridges along it like that and when you
00:00:18run a knife along it it sharpens a blade
00:00:21okay now it’s chopping your knife it’s
00:00:24not it’s not terribly difficult all you
00:00:26need to do is place the knife against it
00:00:28sort of perpendicular to a knife you see
00:00:30like that and then angry a knife
00:00:33slightly at the minute it’s flat on the
00:00:35blade now you don’t want it a 90 degrees
00:00:39you don’t at 45 degrees you want it
00:00:41maybe about 10 degrees really shallow
00:00:43angle and then move your knife down like
00:00:46that so from the base of the knife
00:00:48against the base of the steel you move
00:00:51the knife down till it’s tip against the
00:00:54tip you see another way to look at it is
00:00:58as if this is a stick and you try to
00:01:01carve it to a very fine point okay move
00:01:07your knife down but a little bit
00:01:08pressure on it so you can feel it
00:01:10sticking against the steel and that’s
00:01:13when you know that steel shopping it now
00:01:16obviously this is only one side of the
00:01:18knife you’re doing here to do the other
00:01:19side with the knife underneath and angle
00:01:23it the other way this time
00:01:24so you’re slicing against the bottom of
00:01:26the steel okay
00:01:28heel to heel tip to tip and then once
00:01:33you get comfortable with it you can do
00:01:35one slice on the top one slice on the
00:01:39bottom thighs on the top slice on the
00:01:43bottom always make sure the knife is
00:01:48facing away from you
00:01:50not like this because that way you might
00:01:53cut yourself make sure the blades
00:01:55pointing away and that’s it you don’t
00:02:00need to spend hours doing this if every
00:02:04time when you finish using a knife you
00:02:07just give it a quick tarpon
00:02:09that’s all it takes to keep your knife
00:02:11in tip-top condition if you don’t do
00:02:13that and you leave it in the drawer and
00:02:15you leave it kicking around the blade
00:02:17will blunt to the point where and
00:02:19actually you still won’t be able to
00:02:21sharpen it all it takes is a little shot
00:02:23and like that every time before or after
00:02:26you finish using it it will keep your
00:02:27knife in tip-top condition
