How to prepare spinach and leeks – Jamie Oliver’s Home Cooking Skills

00:00:01vegetables one vegetables you really

00:00:05have to work quite carefully is spinach

00:00:07even if it comes in a bag even if it

00:00:09says it’s already been washed you’re

00:00:10always wise to wash it again because you

00:00:13never know what’s been sprayed on it you

00:00:14never know what’s been living on it or

00:00:16you know who’s washed it before who

00:00:17knows they might have done a good job

00:00:18they might not so it’s always a good

00:00:20idea of washing and there to wash it you

00:00:23use a single of really cool water so

00:00:30spinach in here we go so now you just

00:00:34give it a good wash around your hands

00:00:36it’s really important that there’s lots

00:00:38of water in the sink so that anything

00:00:41any bits of dirt or whatever can just

00:00:42fall and sink right to the bottom and

00:00:44then you can just scoop your leaves off

00:00:45the top once you’re sure they’re clean

00:00:47sometimes you might want to do it if the

00:00:49spinach is really dirty

00:00:50change the water a couple of times to

00:00:52make sure every last bit is all this

00:00:55looks quite clean so probably just one

00:00:56will be enough and then just lift the

00:01:08spinach out of your hands and let it

00:01:10drain and any dodgy leaves you see might

00:01:16just want to eat those our spinach is a

00:01:20delicious vegetable really fantastic

00:01:21flavor but when you when you’re prepping

00:01:23it you were always going to do so much

00:01:25because it cooks down to nothing when

00:01:27you put it in the pan

00:01:28all that spinach there’s probably enough

00:01:29for two people when you think it would

00:01:31be enough for about ten but it’s not

00:01:33okay we’ve got the leaves washed and

00:01:35draining in the colander the next thing

00:01:37we do is there sales a salad spinner

00:01:41inside the salad spinner with this

00:01:43little plastic cage here which it holds

00:01:47all the leaves and when they spin round

00:01:48the water fires off and then we’ll use

00:01:51end up nice and dry in the middle so

00:01:53surely you only just pop the spinach

00:02:01you do just like we’ve done the spinach

00:02:03on the lid on it should clean that’s it

00:02:06and then push the button now you can go

00:02:09keep pushing it in my get a little

00:02:11faster faster you go the more water

00:02:17come on three and you can see all

00:03:05the packs leaves a really nice vegetable

00:03:12they grow they grow yeah cool they grow

00:03:15a layer of the grain later but they just

00:03:17they come up through the air and they

00:03:18get really really muddy so it’s really

00:03:20quite important that you wash leeks

00:03:22properly because you get mud stuck down

00:03:24inside all the layers in there it’s not

00:03:26nice to eat so how you doing

00:03:32okay that’s the bottom of the leak this

00:03:38is the top so pop the bottom down there

00:03:42okay and you would pop your knife in not

00:03:45at the bottom almost at the bottom and

00:03:49then just cut all gone delete and cut

00:03:51all the way down brilliant

00:03:59so now if you open your leak up you can

00:04:00see all that dirt inside you really

00:04:03don’t want that to go on your food we do

00:04:06exactly the same we did with spinach

00:04:07fill up the single cold water this is

00:04:09where you’re glad that you didn’t cut

00:04:11right through the base of the leek

00:04:12because that little bit you’ve left on

00:04:13holds the whole thing together so now

00:04:16you can pop in the water shake it around

00:04:19when you’re happy just hold the bottom

00:04:22and shake it dry back to our boards I

00:04:29play the link down where one before and

00:04:33make sure you bunch all the little

00:04:36leaves together as soon as you can and

00:04:38now we’re just gonna take a knife and

00:04:40we’re just going to cut across the first

00:04:43cut you make is the very end of the leek

00:04:45there might be some tattered leaves

00:04:47there so we can rid of those once it’s

00:04:55nice freshly we’re chopping into it if

00:05:14you see any bits of mud that you might

00:05:16missed then what you can do is see this

00:05:18chopped leek back in the court watch I

00:05:20give another wash and another drain in

00:05:21the corner and then it’s ready to go

00:05:23and there you go there’s your leeks

00:05:25print washed ready to go
