00:00:40your fig on its bum nice not safe on the
00:00:43board
00:00:44your little paring knife you’re going to
00:00:46do a crisscross so you go sort of almost
00:00:51down to the bottom but leave like a
00:00:53centimeter three-quarters of the way
00:00:56down put your knives down you want to
00:01:05squeeze all the loveliness that’s inside
00:01:07out each of these quarters you put a
00:01:10thumb and a finger on each and that’s it
00:01:16so when it’s opened up you can see the
00:01:18beautiful insides and it looks like a
00:01:20flower you’re done beautiful
00:01:29then we’re just going to finish it off

00:01:40then into smaller pieces because we’ll
00:01:42take a little bit mozzarella

00:01:45eat them or you can do salt and pepper
00:01:50just tear it up and then put it back on

00:02:07on the board Roy give us a sprinkle of
00:02:13salt and pepper over everything that’s
00:02:19it you don’t want to tear it up too much
00:02:20nice and bits a little bit of salt do it
00:02:28from quite high up because then the salt
00:02:30Falls nice and evenly over everything
00:02:32little bit of olive oil you go and
00:02:36that’s it beautifully prepared figs that
00:02:38we can over the bit of mozzarella
