How to prepare a pineapple – Jamie Oliver’s Home Cooking Skills


00:00:00so we’re preparing pineapples and I

00:00:03guess the most important thing about

00:00:05fruit before you eat it is that it’s one

00:00:07so you got to check that it’s right and

00:00:09the way we always check is if you can

00:00:11pull a leaf add to the top yeah then

00:00:16it’s telling you that it’s all nice and

00:00:17juicy inside there’s going to be a lot

00:00:20of mess that were cut enough so we’re

00:00:22going to keep ourselves nice and tidy

00:00:23and in order by putting it in the bowl

00:00:25okay so it’s a bit of a thing to tackle

00:00:28isn’t it

00:00:29so first off you want to keep it nice

00:00:33and steady because you’re gonna have to

00:00:35apply a lot of pressure to cut through

00:00:37it because it’s really hard so try and

00:00:40get it as flat on the board as you can

00:00:42put a nice lighter pressure on then we

00:00:44take these top up that’s it brilliant

00:00:51and then get em out the way and then

00:00:55turn around and you want to cut enough

00:00:58off the base so that when we stand it up

00:01:02to cut later you’ve got a nice strong

00:01:04steady platform for him to sit on so I’m

00:01:08going to cut about there okay and then

00:01:17it will sit nice and safe on your board

00:01:20so now we’re going to take the skin off

00:01:22so it’s going to sit really nice and

00:01:25firmly on the board we’re going to start

00:01:28at the top and we’re going to follow the

00:01:30shape of the pineapple round with the

00:01:32knife can you see it’s like curved so

00:01:35you don’t want to lose all the flesh

00:01:36because then you’re losing off your

00:01:38fruit so you keep your knife at a slight

00:01:40angle and you’re going to soar away and

00:01:43follow around the shape of the fruit

00:01:45okay like this

00:01:51you can go a bit deeper in you see I’ve

00:01:54got a little bit of flesh on there I

00:01:59want to be taking away anything that you

00:02:02don’t fancy having in your mouth so

00:02:04because that’s all a bit tough you want

00:02:06to be getting rid of that and then you

00:02:08just keep going all the way around

00:02:12keeping your fingers out of the way and

00:02:14on top keeping it nice and flat on the

00:02:19board when you’ve got most of it off if

00:02:33you just go round again now it’s a bit

00:02:36easier to tackle and the little bits

00:02:38that we missed or the little bits that

00:02:42we go fancies in that these bit you can

00:02:44just shave them off gently so that we’re

00:02:46not you can see what you do in and

00:02:49you’re not going to lose your flesh

00:03:01top job now we’ve got the skin off and

00:03:04we just left with the flesh the only bit

00:03:06that’s left that we actually don’t want

00:03:07to eat is this bit in the middle of the

00:03:09core which if you can feel the

00:03:10difference between there and there

00:03:12that’s quite dry and tough isn’t it so

00:03:15we’re going to try and get to that in

00:03:16the easiest way so because we’ve got the

00:03:19bottom of a pineapple and it’s set nice

00:03:21and firmly on our board it won’t slip

00:03:23around so fingers right on top right on

00:03:26your fingertips keeping them out the way

00:03:29and then your knife is going to go

00:03:31straight down the middle so get your

00:03:33blade in the middle of that core that

00:03:34you can see in the circle

00:03:36and you’re pushing your tip down to the

00:03:39board hit the board and then pull the

00:03:42heel down freeing that’s in half and

00:03:46then we can light flat it’s the safest

00:03:50way keep your fingers out the way and

00:03:53then in half again point down to the

00:03:58board and then pull the heel down sit

00:04:01keep your fingers like this on top nice

00:04:05and firmly one that’s it

00:04:08now we’ve exposed our core on every edge

00:04:12so we can cut it off really easily so

00:04:15put your pineapple on its side on its on

00:04:18its biggest face so it sits nice and

00:04:20snugly on your board that’s it and then

00:04:24cut that core off so put your knife at

00:04:26an angle and put through I said

00:04:31brilliant get rid of that old tough bit

00:04:35then do the same again that’s it that’s

00:04:43it

00:04:45so now we just left with the flesh of

00:04:47the pineapple we’ve got rid of all this

00:04:49stuff we don’t want which is quite long

00:04:52and then we can prepare this however we

00:04:55want to eat it so keep the tip of your

00:04:57knife on your board and then you’re just

00:05:00gonna and then we’ve got nice delicate

00:05:10little slices of pineapple or if you

00:05:14feeling like something a bit chunkier

00:05:26and that’s it’s not too bad is it we’ve

00:05:29picked a perfect pineapple
