00:00:08bruton vegetables into matchsticks now
00:00:11I’ve got my board set up here cloth
00:00:13under it as usual stop it moving about
00:00:16I’ve got a cook’s knife which is nice
00:00:19and sharp perhaps a little bigger than
00:00:22you might think you’d need but I’ll show
00:00:24you why later on my first thing I’m
00:00:27gonna do is an apple so here’s my Apple
00:00:30as you can see it’s a lovely copses
00:00:32apple it’s a bit bent and squint but
00:00:34it’s still going to taste great a lot of
00:00:37chefs tie themselves in knots trying to
00:00:39get perfect perfect matchstick pieces
00:00:41all exactly the same size and they waste
00:00:44a lot of the fruit and they waste a lot
00:00:45of time really it doesn’t make any
00:00:48difference to how things eat how things
00:00:49taste so we’re gonna use the whole apple
00:00:51and I’ll show you how so first thing cut
00:00:56it in half I always say the apples got a
00:01:00core but I’m not worried about this
00:01:03chorus fine to eat and extra texture to
00:01:06the salad so I’m not going to cut around
00:01:08it and waste half the Apple so there’s
00:01:11half the Apple here I’ll put it facedown
00:01:13and then with my knife I’ll just cut
00:01:20slices of Apple down like that onto the
00:01:24board now make them as thick or as thin
00:01:26as you like
00:01:30so next thing I’ll do take a few of
00:01:33these turn them on the side like that
00:01:38see I’ll get the knife made them all
00:01:41nice and even and then just cut down
00:01:44again and you’ve got little matchsticks
00:01:53right as you can see they’re not perfect
00:01:56matchsticks
00:01:56they’re not even matchsticks but that
00:01:59doesn’t really matter if you want to
00:02:01practice all day and all night so you
00:02:02can get them perfectly then go right
00:02:04ahead but for the purposes of this salad
00:02:06it looks nice it’ll eat nice and work
00:02:09perfectly well so I just cut the rest
00:02:12here know a few bits now when you’re
00:02:16holding the apple slices with your hand
00:02:18tuck your fingers in a bit so your
00:02:21fingers out and your nails are on going
00:02:22eyes you’d only cutting your nails tuck
00:02:24your fingers in and then you can always
00:02:26touch the knife the flat of the knife
00:02:29against the edge of your fingers there
00:02:31so you know it’s in a right place and
00:02:34then just cut straight down helps of you
00:02:39knife is sharp because it’s not sharp
00:02:41you aimed at home depress and that’s
00:02:43when things start skinning about and
00:02:45that’s when fingers get cut so sharp
00:02:47knife be very careful in your fingers
00:02:50just cut cleanly and quickly down and
00:02:56they’re in your matchsticks so I do
00:02:59these the very last minute before you
00:03:01only use them because as soon as Apple
00:03:03gets exposed to the air it starts going
00:03:04Brown so this is a last minute job don’t
00:03:07let that make you hurry it because that
00:03:09when you hurry with nayad that’s when
00:03:10you cut yourself
00:03:15now carrots you peel them first of
00:03:18course take the ends off and then look
00:03:24at the size of the carrot and I think
00:03:26I’ll probably get two matchsticks off
00:03:28that I’ll cut it in half they both by
00:03:31the right size and then turn the camera
00:03:36on its side and just cut one little
00:03:41slice off the edge so that when you turn
00:03:44it over its steady and it doesn’t rock
00:03:46so much okay so just like the Apple
00:03:48fingers in sharp knife thin slices
00:03:57this is where you’re really glad get a
00:04:01nice sharp knife
00:04:04practice makes perfect with this doesn’t
00:04:07matter if not all of them go straight
00:04:08through they’ll still eat fine there you
00:04:13go you might be left with an ND bit but
00:04:16that’s fine better you’re left with that
00:04:17then you cut your finger and there’s a
00:04:19whole lot of nice thin carrot slices so
00:04:22like the Apple pile a few of them up and
00:04:28cut them nice and thinly there you go
00:04:39now they’re not all perfect length and
00:04:41are all perfect up some chefs get very
00:04:43precious about this but they look nice
00:04:46they’ll be delicious and that’s how to
00:04:50cut carrot matchsticks now there’s some
00:04:53other tools you can use to help you cut
00:04:55lovely thin carrot matchsticks or any
00:04:58other root beds for that matter this is
00:05:00one of them it’s a speed peeler with
00:05:03some little sharp edges on it here and
00:05:08use it just the same way as you do a
00:05:09speed peeler and I’ll show you how so
00:05:11I’ll just move this carrot out of the
00:05:12way who’s a new camera long thin one I’m
00:05:19going to lay it down on the table and
00:05:21there really is this imagine you’re
00:05:24peeling it
00:05:27you drag that down length the carrot and
00:05:30you end up with lovely strips these are
00:05:32quite long but we can cut them in half
00:05:33after we peeled them
00:05:45now you can either leave your carrot
00:05:47bits like that they’re quite nice and a
00:05:50salad or you can cut them in half if you
00:05:52want more matchstick size that nice and
00:05:54English and that’s how you can’t fruit
00:05:57and veg into matchsticks
