00:00:07and I’m going to show you how to wrap a
00:00:09clits dumpling it’s what you need to do
00:00:11is cut yourself to 1 metre lengths of
00:00:16loose-leaf paper you don’t have to be
00:00:19too precise you just want to leave
00:00:22yourself enough room to wrap your
00:00:23something just like that and then what
00:00:29you need to do is along with a good
00:00:33sized tea towel you want to wet the
00:00:35detail and the greaseproof paper under
00:00:37running water not so they’re soaking wet
00:00:41but just nice and damp and bring out any
00:00:45excess water then do the same with a
00:00:50greased creep scrunch it up bring out
00:00:58the water and then unfold leave that
00:01:04what’s on side and then the second one
00:01:06as well
00:01:10same again first you want to lay out
00:01:15your tea towel so make sure you’ve got a
00:01:19clear work surface unfold one of the
00:01:25greaseproof bundles on top of the tea
00:01:27towel like that and then in crisscross
00:01:32shape you want to unravel the other one
00:01:36and 90 degree angle
00:01:38shake out any water it’s still a little
00:01:41bit wet just about perfect
00:01:48all you need to do is drizzle over a
00:01:51little bit of olive oil don’t go crazy
00:01:52you just want to create a small layer of
00:01:56grease and to keep the pudding from
00:01:59sticking to the paper and then just use
00:02:02your hands to massage in weight all over
00:02:09what she can and then what you want to
00:02:13do get some clean flour a sieve and from
00:02:15quite a good height just shake over
00:02:21plain flour all over your grease proof
00:02:25paper it’s going to create a layer
00:02:27around your dumpling almost like a crust
00:02:30so when it’s steams and you cut into it
00:02:33afterwards it’s going to have almost
00:02:34like a little layer all around the
00:02:36dumpling there you go
00:02:39Andy that’s one side I’ve got my glue
00:02:42tea dumpling mixture here ready-made
00:02:44what you want to do is just spoon it
00:02:47into the middle of the greaseproof where
00:02:50they cross so just spin it into here
00:02:53it’s quite robust it won’t spill out or
00:02:56one hour it’s quite a lovely thick
00:02:59mixture that you can be quite rough with
00:03:03don’t worry too much once you tie all
00:03:06together it will form a lovely pudding
00:03:09mould just try to spoon it on top of
00:03:12each other like that
00:03:17and what you want to do is bring up the
00:03:19greaseproof paper so scrunch it up all
00:03:28sides together as much as you can try
00:03:36not to tear the paper that makes sure
00:03:40it’s completely tied up so at the base
00:03:43hold that where it is get yourself some
00:03:45string pair of scissors and if you can
00:03:48get someone to help you do just because
00:03:51it’d be easier with two pairs of hands
00:03:55and just as tight as you can wrap that
00:03:58around the base knot
00:04:15I pushed pudding into lovely man pudding
00:04:17shake not what you want to do is to cut
00:04:20off the excess paper and the excess
00:04:29string and then you’ll see the same
00:04:32again with the tea towel just bring the
00:04:36tea towel up and around so it’s
00:04:40important to use the biggest Tito you
00:04:42can and same again you want to tie this
00:04:47as tight as you can but almost leave
00:04:49like a little bit of room for the
00:04:51pudding to expand so don’t get all the
00:04:53way to the base just just about like
00:04:56that that’ll be fine and that’s the base
00:04:57of the pudding in here so you’ve given
00:04:59it a lovely shape it’s still really firm
00:05:03once it grows and expands as its
00:05:05steaming it’s just got a little bit of
00:05:07give so same again wrap the string
00:05:10around tie that in place give yourself a
00:05:19double knot so that doesn’t come out and
00:05:24trim off the ends and there you go all
00:05:28you have to do now is steam the pudding
00:05:31for three and a half hours and then
00:05:33serve it warm or cool or a smear of
00:05:36butter or any how you like and that’s
00:05:38how you wrap a clue to dumpling
