Jamie Oliver’s top fish-buying tips


00:00:00okay I’m gonna give you a really basic

00:00:02sort of class on buying fish fish and

00:00:05shellfish

00:00:06to be honest the same things kind of

00:00:08apply and I’ve tried to sort of get some

00:00:10slightly dodgy fish and some good fish

00:00:13and show you the difference right but

00:00:15really I mean here’s the thing about

00:00:17fish you’ve got a whole load of people

00:00:18around the world

00:00:19I don’t like fish fish stinks of fish

00:00:21you know it’s fishy and it’s rubbish

00:00:24good fish is never fishy

00:00:25it smells off kind of nothing if

00:00:27anything that’s see right so I want to

00:00:30kind of you know I want to eat great

00:00:31fish for the rest of your life I do not

00:00:33want you to buy dodgy fish and to be

00:00:35honest if I turn buying fish into like

00:00:37street culture if you went to buy some

00:00:39posh handbag right and it was a fraction

00:00:42of the price and it looked a bit dodgy

00:00:44like your instinct would tell you you’re

00:00:46being mugged or buying a fake right now

00:00:48I’m trying to tell you with fish right

00:00:50you’ve got to use all your senses right

00:00:52sense of I was gonna say it hearing no

00:00:55you don’t want to do the centre hearing

00:00:56you want to do sense of smell the sense

00:00:58of touch use your eyes what we’re

00:01:02looking for here is like you know it’s

00:01:04not terrible fish but to be honest I’d

00:01:05never buy this fish here one because it

00:01:07smells look at its eyes his eyes are

00:01:09clouded over like that when you go and

00:01:12look at the gills gills is are really

00:01:14good you want nice bright red gills now

00:01:16they ain’t there so that’s telling me

00:01:18that someone didn’t want me to see the

00:01:20gills right also it smells if I touch it

00:01:23you know if I put my finger in it kind

00:01:26of stays dented you know for quite a

00:01:28long time but to be honest I wouldn’t

00:01:30have even got to any of that because it

00:01:34stunk it smelled the fur when I saw it

00:01:36so that would have never got bought in

00:01:38my house right there let’s look at a

00:01:40nice bit of sea bass like this it’s a

00:01:42beautiful elegant fish its shiny look at

00:01:45those eyes clear as clear can be you

00:01:48know you know nice red gills you know

00:01:52when you push your finger in it sort of

00:01:54bounces back it’s got a nice firmness to

00:01:56it like that I’ve got some trout over

00:01:57here which are pretty decent as well

00:01:59they don’t smell they’ve got shiny shiny

00:02:01eyes a lovely Sheen to the skin you know

00:02:03I would buy that but I would buy it

00:02:06because it doesn’t smell and it looks

00:02:07fit to eat okay so I just have that

00:02:09confidence not to get ripped off and

00:02:11that’s essentially what it’s about don’t

00:02:12get ripped

00:02:13okay also with shellfish and to be

00:02:17honest it’s the same of lobster crab

00:02:18langoustine prawns again use the sense

00:02:22of smell it shouldn’t smell fishy at all

00:02:24or sort of horrible in any in any way in

00:02:27the app I’ve got some recipes for

00:02:29mussels and I want to show you I’ve got

00:02:32two mussels here I’ve got you know they

00:02:35kind of look pretty much the same right

00:02:38but what we’re looking for is when you

00:02:40tap them one will go tight on this one

00:02:44we ain’t doing nothing because it’s dead

00:02:47right and you just throw it away

00:02:49simple as that so whenever you get home

00:02:51from buying your mussels and when you

00:02:54buy them do that to your muscle they’re

00:02:58gonna close up if you can find any in

00:03:00here if it’s open throw it away right at

00:03:03the same time when you’ve cooked it if

00:03:04there’s any mussels or clams that don’t

00:03:07open throw them away just use your eyes

00:03:09use your common sense like these mussels

00:03:14they kind of smell like cucumber salted

00:03:16you know I mean that there’s nothing

00:03:17fishy or horror about these at all so I

00:03:21know that’s really really basic but so

00:03:23many people that are starting to cook or

00:03:26a bits of auntie fish you might find

00:03:29that it’s because you’ve always bought

00:03:31dodgy fish right and it’s basic stuff

00:03:33like that and the other sort of tip

00:03:35really on your fish is no matter where

00:03:37you live in the world like if you want

00:03:39to take food and cooking seriously even

00:03:42if it’s online find yourself a source of

00:03:45getting decent fresh wonderful fish

00:03:47it’ll be worth it it really really will

00:03:49so there might be a van that comes to

00:03:52your town you know once a week there

00:03:54might be a mail-order company that just

00:03:56sell you brilliant stuff maybe there’s a

00:03:59long way home from work and there’s a

00:04:00really good fish mongers it’s

00:04:01particularly good on a Thursday or a

00:04:03Friday but you know just talk to people

00:04:05talk to chefs go into restaurants where

00:04:07do you get your fish from but you know

00:04:08there’s no excuse for anyone not being

00:04:11out a buy and cook

00:04:12brilliant brilliant fish so get to know

00:04:14your fishmonger and good luck
