Jamie Oliver talks you through preparing an avocado

00:00:02avocados people love them loads of

00:00:05people buy them and did you know the

00:00:06biggest and most common reason for a cut

00:00:08across the palm is avocados so you might

00:00:11as well know how to do it properly

00:00:12safely and quickly

00:00:14so get your avocado right you want to go

00:00:16straight smack bang in the middle get a

00:00:18sharp knife carefully and slowly and

00:00:21smoothly cut through find the stone in

00:00:24the middle then move out and just rock

00:00:27it around never applying never ever

00:00:30applying too much pressure that’s one of

00:00:32the reasons that if you have a blunt

00:00:33knife it’s even more dangerous than the

00:00:35sharp knife because you have to really

00:00:36really push it and then when it goes off

00:00:38with the old fingers so we’re just

00:00:41moving it around like that once you’ve

00:00:43done that it will just click out like

00:00:45that and there you go beautiful avocado

00:00:48if it doesn’t click out that it ain’t

00:00:50right when you shouldn’t have bought it

00:00:52in the first place if you’re ever Kardos

00:00:54not ripe just pop it in a brown paper

00:00:55bag of a banana

00:00:56it’ll be good in a day and a half no

00:00:58worries at all and then a lot of people

00:01:01kind of get geeky and try and sort of

00:01:02you know peel the avocado like this

00:01:05nothing wrong with that you can use like

00:01:07a little knife to do it or just peel it

00:01:09off like that as you can see it’s fairly

00:01:10fiddly you can do it slightly cleaner

00:01:12using a knife like this but I want to

00:01:15give you an alternative that I think’s

00:01:16much easier and less stress and sort of

00:01:18less bitty so let me just finish this so

00:01:21you can see what I’ve done so that’s

00:01:22what we want to achieve a peeled piece

00:01:24of avocado we’re going to get rid of

00:01:26your skin and stuff here and then while

00:01:29we’re talking about it the avocado stone

00:01:32this is where the cuts happen guys

00:01:34because people put them in their hand

00:01:36and if they’re not experienced you know

00:01:38they see chefs just flick it which is

00:01:41what I do and then twist it which is

00:01:43what I do and it comes out right you

00:01:45shouldn’t do that unless you’re an

00:01:47advanced cook you put the avocado down

00:01:49like that you get hands all the way away

00:01:51from it you just tap it like that then

00:01:53you twist it out and then at no point

00:01:55does your hand and the knife get

00:01:57anywhere near each other but basically

00:01:58the cuts happen when that happens not

00:02:00pretty so peeling it nice and quickly

00:02:04instead of trying to peel it with your

00:02:05knife or your fingers just get a nice

00:02:07big spoon like this in here and just rub

00:02:10it around the perimeter of the skin

00:02:14about that and you can get the whole lot

00:02:16out in one by that which is dead easy

00:02:19look that’s completely clean in there

00:02:21the other way to do it

00:02:22now just to prepare another one nice and

00:02:24quickly knife in find the stone roll it

00:02:28around find other end twist it

00:02:30put your stone down tap it twist it out

00:02:33it comes now another way to do it which

00:02:35i think is kind of cute

00:02:36is instead of doing one whole half just

00:02:39get a teaspoon or this spoon and do

00:02:41lovely little kind of scoop outs and

00:02:45that for a salad

00:02:46looks dead cute you’ve got a nice sort

00:02:49of wave to it you can see that lovely

00:02:50wave you get to it which is nice sort of

00:02:51shapes and again it’s dead quick and you

00:02:57don’t have to be uptight to do it so

00:02:58there you go I’m now exactly an avocado

00:03:00but your minds will do it properly and

00:03:01safely and also make it look nice if you

00:03:04want a bit be a bit 1980s that’s one of

00:03:06my first jobs as a chef you can

00:03:08basically get that piece of avocado

00:03:10sliced not quite to the end I never do

00:03:14this by the way but I can’t stop myself

00:03:15from doing it and just slice all the way

00:03:17down like that

00:03:18and when you’ve done it you go like that

00:03:20and you have a nice little fan our takes

00:03:23me back to the 80s rock and roll
