00:00:05very this is backyard cooking mate we’ve

00:00:08got a little camera and anything could

00:00:09happen if you were to tweet in tweet in

00:00:16I’ve got a bunch of questions that I’m

00:00:18going to answer I’ve got the lovely list

00:00:19here that’s going to ask questions and

00:00:21they’ll be tweets coming in so feel free

00:00:23to do that we’ve already put a little

00:00:24question out there sort of what dishes

00:00:27do you want help with and shockingly to

00:00:29me omelette mastering the perfect

00:00:32omelette it was requested so I’m gonna

00:00:34give you your request so just to kick

00:00:37off and we’ll come back to some

00:00:38questions later we’re gonna do a perfect

00:00:40omelette now I suppose in a way medium

00:00:43heat nonstick pan about 8 inches the

00:00:46nice thing about an omelette all that

00:00:48you know the difference between a good

00:00:49omelette and the bad one is phenomenal a

00:00:52bad one is hideous a good one is just

00:00:54wonderful but eggs are probably the

00:00:57cheapest sort of the most brilliant form

00:01:00of protein all the nutrients minerals

00:01:02and stuff in there are really really

00:01:05good for you and they’re so quick to

00:01:07cook so basically what I’m saying is

00:01:09anyone can afford a good omelette and

00:01:11anyone has got enough time to make it so

00:01:14I’ve got three eggs in there big boy get

00:01:15in there in there we’re going to hit

00:01:17that up with some pepper

00:01:19we’ve got some salt over here we have

00:01:23got our little that we’ve made an effort

00:01:25we’ve made an effort to get a pan cam so

00:01:27there’s our pan can gonna whisk this up

00:01:30how does this work is your just going to

00:01:32ask random questions as we go yeah

00:01:47okey-dokey now can we hear lives Richard

00:01:52good okay

00:01:53so can’t afford to get loads of organic

00:01:56meat now first and foremost and at the

00:01:58forefront of the food revolution it’s

00:02:00about just cooking a meal you know

00:02:02cooking from scratch it’s about fresh

00:02:04ingredients and it’s about sitting down

00:02:06with your family once or twice a week if

00:02:09you’re doing that already

00:02:10then you’re incredible you’re in the

00:02:12elite as far as trying you know if you

00:02:14haven’t got the budget for organic meat

00:02:16and just to clarify a lot of people

00:02:18think that organic meat is crazy weird

00:02:20hippie food why is it so expensive look

00:02:23it’s more expensive because the animals

00:02:26generally live twice as long if they

00:02:28live twice as long they need twice as

00:02:30much food which is generally while

00:02:32they’re twice as much okay so that’s why

00:02:34but it’s a good question because if

00:02:37you’re using ground meat if you’re going

00:02:39to use the cheaper cuts of meat anything

00:02:41like the brisket or the shins of beef or

00:02:43you know in a lamb it’ll be the shoulder

00:02:45of lamb or the shoulder of pork

00:02:46you know those we call them in England

00:02:49second class there’s nothing wrong with

00:02:50them it just means they cannot be cooked

00:02:52quickly in a pan if you’re using like

00:02:54the stewing clap cuts or the cuts that

00:02:56needs slow roasting or cooking overnight

00:02:59or mincing and sort of turning into a

00:03:01ragout you can actually pick those cuts

00:03:03up really really cheap and also kind of

00:03:07going back to stuff you know things like

00:03:08the chilies the ragu ‘s the polonaise is

00:03:11using the ground beef you can take a

00:03:14little meat and with other vegetables in

00:03:17herbs and stuff you can take it a long

00:03:19long way

00:03:19so hopefully that that question helps

00:03:22also if you buy local you’ve got a

00:03:24better chance of getting a cheaper deal

00:03:26because you have a relationship and also

00:03:29it’s not necessarily just about organic

00:03:31you know trying to get really good

00:03:32free-range or higher welfare stuff is

00:03:35really good too okay let me just get

00:03:37back to the earthly omelet it’s pretty

00:03:39damn hot in the pan I’m gonna add some

00:03:43smoked streaky bacon so I’m going to put

00:03:45that in first of all I’m gonna do a

00:03:47plain omelet but I’m just gonna give you

00:03:49like a little flavor you know something

00:03:52that I like to do funnily enough for my

00:03:54seven-year-old kid does this

00:03:57the weekend and Daisy she loves to cook

00:04:01loves to cook she can do fried eggs

00:04:04poached eggs boiled eggs omelets and I

00:04:08know I’m not supposed to be training her

00:04:09up but she’s interested so I can’t help

00:04:12myself and then popping my other kid

00:04:14she’s not interested at all she’s just

00:04:15doing her other things so the bacon goes

00:04:18in also I’m gonna you’ve got smokiness

00:04:21you’ve got saltiness come over here look

00:04:23at these Tomatoes if you look down the

00:04:24farmers markets these days or in decent

00:04:26supermarkets you haven’t just got the

00:04:29box standard boring Tomatoes you’ve got

00:04:31reds yellows cherries you can get back

00:04:35Tomatoes tight tiger skin sort of

00:04:38looking marble to Mars so have a little

00:04:40look around I guess what I’m saying is

00:04:42there’s some interesting stuff out there

00:04:44so make use of it I’m just going to let

00:04:47this fry and we’ve got crisps penis

00:04:50happening in the pan here let’s have a

00:04:51little look in here we’ve got the

00:04:53crispiness means flavor we’ll get that

00:04:56going I’m cooking it slowly because I’m

00:04:58talking too much

00:04:59any more questions lovely Liz all

00:05:08vegetables all breasts of course okay

00:05:12but first and foremost like you know

00:05:15eating different things trying different

00:05:16things that we’re all human we all have

00:05:19things that we don’t like that is normal

00:05:21okay but at the same time like anything

00:05:24else in life whether it’s music or

00:05:25fashion or clothes or art or whatever

00:05:27it’s what you’re exposed to it’s what

00:05:29you see it’s what you smell so literally

00:05:31just going down in America now there’s

00:05:33some incredible farmers markets I

00:05:35guarantee you that if you walk around

00:05:37there for 45 minutes

00:05:39just looking smelling having a laugh you

00:05:41will see stuff that kind of sticks in

00:05:44your head and you might have a little

00:05:45try of things and you might have a

00:05:47little go and that’s what it’s all about

00:05:49but if you want to find ways of getting

00:05:50veggies in you and liking it I guess

00:05:54things like juicing is really good you

00:05:58know just if you like like chopped

00:05:59salads you know if you like any other

00:06:01kind of foods that you love if you like

00:06:03a little salsa houses or wicked ways of

00:06:05getting loads of veggies into your into

00:06:08your food

00:06:09herbs citrus stuff like that so that’s

00:06:11let’s do this omelet cuz it seemed to be

00:06:13going forever what I want to do is just

00:06:16throw these tomatoes in I’m just gonna

00:06:19literally warm them up so I’ve got a

00:06:21lovely sizzling crispy bacon right now

00:06:24I’ve tossed it and all that lovely sort

00:06:25of bacon fat I’m going to take this out

00:06:28onto here

00:06:30I want this pan to be kind of hot but

00:06:33not too hot so I’m just going to take it

00:06:35off the hopper the heat for a second

00:06:36I’ve already got a little bit of fat in

00:06:38there I’m going to put an egg in there

00:06:40now I’m using a three-egg omelet right

00:06:43you can make it over two egg omelet as

00:06:46you can see I’m not even on the gas at

00:06:47the moment can you see as I move this

00:06:49around we’ve got it starts to set and I

00:06:54move the pan around like that and I’m

00:06:57just using residual heat now guys

00:06:59residual Heat and what we want is I

00:07:02don’t really want it to be like really

00:07:03golden on the outside I want it to be

00:07:05sort of delicate and soft and silky so

00:07:07I’m gonna take a little bit of cheese

00:07:08just a tiny bit and just grate that just

00:07:13little swoop to that from a height and

00:07:15what’s interesting if you get in there

00:07:17in the camera you’ll notice that it kind

00:07:18of looks still a little bit uncooked on

00:07:20the egg right which is at this point but

00:07:22eggs cook a really low temperature they

00:07:26cook at a really really low temperature

00:07:28so you kind of ought it’s a little bit

00:07:30like a now I’m going to talk about

00:07:32soccer now and you guys hate soccer

00:07:33it’s like when you’re trying to curve a

00:07:35ball into the top right corner

00:07:37but you kick it over there or in tennis

00:07:39you’ve got you need to try and put some

00:07:40spin on it you go over there but it ends

00:07:42up over there we’ve with the omelet you

00:07:44got to take it off early to cook it

00:07:46perfectly if you cook it perfectly in

00:07:48the pan by the time you get it to your

00:07:50plate it will be miserable dry fluffy

00:07:52and hideous right so bear with me on

00:07:54that one over here I’m just going to

00:07:57chop up this beautiful crispy omelet

00:08:01sprinkle this in like that going in with

00:08:05those just softened lovely softened

00:08:07tomatoes and then that’s it and I know I

00:08:11know it’s I know it’s Kiki guys but when

00:08:14my seven year old she does this on her

00:08:16own right when she mastered it I was so

00:08:19proud because there’s something about

00:08:21allowing your kid

00:08:22the basic skills it’s so weird like you

00:08:25know if you look at what kids do on

00:08:27America’s Got Talent

00:08:29you know that dancing around flipping

00:08:30around Pogo in I don’t know you know

00:08:32breakdancing BMX in karate whatever kids

00:08:36are so talented kids are so like precise

00:08:40and they’re so amazing and yet what no

00:08:43one wants to give them a pan or a knife

00:08:45because like oh like it’s more dangerous

00:08:47than a bike on a road next to a free

00:08:49ride you know I mean and so when I see

00:08:51my little kid knock out a beautiful

00:08:53perfectly cooked omelet I know that for

00:08:55the rest of her life she’s gonna be out

00:08:57of cook at university or if she goes she

00:08:59probably won’t go to university but you

00:09:01know she’ll be able to look after

00:09:01herself and that’s that’s the main thing

00:09:03so okay over here I’m just gonna roll it

00:09:07up like that beautiful and then I’m

00:09:11going to turn it out take the plate to

00:09:12it one two three gorgeous like that and

00:09:16the point of this bad boy is delicate

00:09:21soft silky still gooey in the middle

00:09:23smoky bacon in tommorows bit of a winner

00:09:26and you can win this omelet I will post

00:09:39some I put some radishes that we grew

00:09:41these radishes in a flower box sort of

00:09:43four floors up in a block of flats from

00:09:46seed they don’t take very long to grow a

00:09:48couple of weeks so I’m going to show you

00:09:50and make a quick salad it’s nothing

00:09:53special

00:09:53I’ve got the cheapest lettuce that money

00:09:55can buy I think you call it a butter

00:09:57leaf lettuce and we in England call it

00:10:00just around lettuce so I’m going to

00:10:02throw that in this is the kind of list

00:10:04that you would get in British schools

00:10:06I’ve got the radish here people are a

00:10:09bit scared of radish but I’m gonna call

00:10:11some have some slice some kids love to

00:10:14grow these by the way

00:10:15and to answer that question that that

00:10:17person that was saying I don’t like any

00:10:18salad I don’t want any veg his in all of

00:10:22the time that I’ve worked with children

00:10:24in schools England or America and the

00:10:27small amount of work that I’ve done in

00:10:28Australia as well

00:10:29I’ve never ever met a child that won’t

00:10:32eat veggies or fruit when they’ve got

00:10:34involved in growing them and planting

00:10:36them fact so you know when you’re

00:10:39getting when you get involved in working

00:10:42with this stuff it’s great

00:10:44so radishes go in I’m gonna give you a

00:10:48quick principle I don’t know if you guys

00:10:50are into this but for me personally like

00:10:52herbs are essential in salad so just a

00:10:55little bit of parsley a mint parsley and

00:10:58mint make any salad really really Rock

00:11:01so I’m just gonna chop that up buyin

00:11:04salads in bags is okay but it’s really

00:11:07expensive so if you’re cash-strapped you

00:11:13know kind of buying whole heads is much

00:11:15better to make a dress in my simple kind

00:11:19of recipe is do it in a jam jar an empty

00:11:21jam jar and do three to one and that

00:11:24means three times more olive oil than

00:11:27acid so if I do it in a jam jar you can

00:11:30kind of very much visually they serve

00:11:32mr. cameraman get right in there big boy

00:11:34is that the closest you can get come on

00:11:35America is waiting on you if you film

00:11:37this wrong they’re gonna there’s gonna

00:11:39be dodgy dressings made all around the

00:11:41place that’s it get on your knees god

00:11:42bless you okay so three parts olive oil

00:11:45to one part lemon juice a good pinch of

00:11:47salt and pepper if you wanted to put

00:11:49herbs in there you can if you want to

00:11:51take it to Asia

00:11:52you could go lime and go Chile you can

00:11:54go soya sauce you can go coriander if

00:11:56you wanted to go to Italy you could put

00:11:57a little bit of there’s sun-dried tomato

00:11:59some olives and some balsamic vinegar

00:12:01you know basically what I’m saying is

00:12:03the concept of three two one three parts

00:12:05olive oil to one part acid use that take

00:12:08that and wherever you come from in life

00:12:10make it your own team okay lid on

00:12:14shaky-shaky you just do it once a week

00:12:18nothing can really go off in there

00:12:20that’ll see it if you did that much it

00:12:22could sit in your fridge for a whole

00:12:23week

00:12:24the biggest ripoff in the world is those

00:12:27hideous bottles of dressing full of

00:12:30loads of crack you know not really into

00:12:33those so at the end of the day most of

00:12:36the people that I work with everyone

00:12:38always says it’s way more expensive to

00:12:40cook fresh

00:12:41than it is to buy like the cheap

00:12:44takeaways and that’s probably true for

00:12:47cooking for one but debatable on – and

00:12:51for a family of four categorically

00:12:54absolutely not

00:12:55I’ve never worked the family where we

00:12:57can’t save them at least 10% on their

00:12:59shopping bill which is normally like a

00:13:01couple of grand a year and you know you

00:13:05want to do stuff with that money you

00:13:06know ask is good it’s good to save money

00:13:08and if it makes you live longer as well

00:13:11then happy days let’s just finish that

00:13:13salad this is a really humble salad

00:13:15costs nothing great with steak fish

00:13:19crunchy citrusy but more to the point

00:13:22that the reason for cooking these two

00:13:24dishes today is the kind of food that

00:13:26you guys have requested simple things

00:13:27done well a basic salad oh sorry a basic

00:13:30salad dressing and a basic omelet so get

00:13:34guys if you like that if you like the

00:13:36fact that we’ve got this little life

00:13:37thing going on I really want to work

00:13:39with you guys in America support you
