How To – prepare skate wings


00:00:04hi I’m Pete from Jamie’s food team and

00:00:07I’m going to show you how to trim a

00:00:09skate this is your skate it’s got a bony

00:00:18bit at the top here you can see what

00:00:22you’re going to trim off and a little

00:00:25fringe around the bottom which is just

00:00:27going to tidy up so we end up with a

00:00:29neat almost semicircular piece of fish

00:00:33now the easiest way to take this bit of

00:00:37bone off used to use a heavy chopping

00:00:41knife but instead of hacking it like

00:00:45that and I put the knife in position

00:00:49I’ll take a rolling pin but you can use

00:00:53a piece of wood or anything that’s heavy

00:00:56and wooden you may not want to use your

00:00:58rolling pin because we’re going to hit

00:01:01the knife like that and you might end up

00:01:03marking it if you don’t mind or it’s an

00:01:05old rolling pin that’s fine but you

00:01:08might prefer to use just a plain piece

00:01:09of wood the nice thing about this is

00:01:12that when you hit the knife with a pin

00:01:15it’ll go straight through the bone and

00:01:17make the cut in exactly the right place

00:01:29there we go the cuts perfect in the

00:01:33right place

00:01:34listen go in the bin and here’s your

00:01:41skate wing we’ve got a slightly raggedy

00:01:45edge to the bottom and we’re going to

00:01:48take a pair of scissors and just trim

00:01:50that up make it look a little nicer

00:01:51little more or hemispheric kitchen

00:01:55scissors a good nice heavy-duty kitchen

00:01:57scissors and you just trim around the

00:01:59edge

00:02:03no trick to this it really is as simple

00:02:04as it looks you’ll know if you’re

00:02:07cutting too far up into the fish because

00:02:09it’ll get hard to do this should really

00:02:11be no more than cutting cardboard no

00:02:15more effort than that required there we

00:02:24go so you have a skate wing nicely

00:02:28trimmed no bone at the back and no wispy

00:02:34frilly bits around here nice smooth edge

00:02:36and this is ready to be cooked either in

00:02:39a hot frying pan or in a hot oven or

00:02:42maybe in a pot with some white wine ever
