How To – prepare an octopus, from ‘Jamie Does…’

00:00:00I’m going to show you how to prepare an

00:00:01octopus here is learn on a chopping

00:00:05board put all its tentacles this way and

00:00:10you’ve got three parts the head which is

00:00:12this bit you’ve got the tentacles which

00:00:15is this bit and a bit in the middle and

00:00:17the bit in the middle is got eyes and

00:00:18beak

00:00:19and stuff like that in it nests of it

00:00:21you want to get rid of so all I’m going

00:00:23to do is cut here just below the eye see

00:00:27the eyes just at the bottom of the head

00:00:36okay that’s the bit you get rid off now

00:00:42in the middle is its little beak if you

00:00:45want to get rid of too

00:00:46it’s hard to spit like shell so this is

00:00:53what we have and you see through there

00:00:59now inside their head there’s all sorts

00:01:01of other gunk which you need to get rid

00:01:03of so all you do you can turn the head

00:01:06inside out and call this out it’s quite

00:01:15tough it’s not for the squeamish let me

00:01:22go

00:01:26there are still some bits and pieces in

00:01:28there but I’m going to give everything a

00:01:31wash now just to see where we are so

00:01:33I’ve got do this in the sink under

00:01:36running water

00:01:36I’ve just got a big bowl called walk

00:01:38like you turn the head inside out

00:01:49clearly this stuff off you don’t want

00:01:52basically what you want to see a nice

00:01:55white clean head wash as much as you can

00:02:03of the ink off there we go

00:02:07once you hold it peels off quite easily

00:02:12and there we go

00:02:13where’s the head

00:02:18now the tentacles they just need a good

00:02:22wash basically all these Sakura bits

00:02:25here sometimes they put there and them

00:02:28so you just need to wash the night once

00:02:33I got the worst day off I’ll change the

00:02:34water just give it another another rinse

00:02:37again so that so loving someone and it’s

00:02:51all good cleaner

00:02:54I changed the water in the bowl just

00:02:59give another little rinse and get all

00:03:01the last of the ink off on it okay so

00:03:05it’s not pretty clean it’s gonna pop it

00:03:07on my board into my board I’ll get rid

00:03:16of the water now Pat helped us dry just

00:03:31so it’s not skidding around the board

00:03:37right now the head just gonna pull the

00:03:44skin off

00:03:50that’s it okay I’m just going to trim

00:03:56this little bit here put a sharp knife

00:04:01so that’s nice and neat

00:04:03then go that’s the head we’ll get rid of

00:04:05the skin and now the octopus itself the

00:04:12legs themselves it all depends what you

00:04:15want to do with them you can keep them

00:04:16in one whole piece if you like or you

00:04:20can cut the tentacles apart like that

00:04:29and there’s your prepared octopus

00:04:41you
