00:00:08mini Scotch eggs to start I’ve got some
00:00:12soft-boiled quails eggs this process can
00:00:15be done with quails eggs or hen eggs
00:00:17obviously you need some more meats I’ve
00:00:19flavored my meat with some paprika and
00:00:22not making it and I’ve got plain flour
00:00:23some whisk eggs and some bread crumbs to
00:00:28start you want to get some of the
00:00:29sausage meat just a little ball about
00:00:32marbles at large marble-sized make sure
00:00:34you got lovely clean hands and roll it
00:00:37out in the palm of your hand and what
00:00:40you want to do is create a coating for
00:00:42the eggs themselves so quite evenly as
00:00:46you can you don’t be too precise but
00:00:50flatten out the sausage meat into the
00:00:52palm of your hand like this you want it
00:00:55quite even about 6 and Smeaton’s and
00:00:59then get one of your eggs pop it in the
00:01:01middle and slowly bring up the sausage
00:01:05meat around the egg pushing it all
00:01:09around as you go and what you want to do
00:01:12you want to join all the ends so it
00:01:14coats it and make sure it’s completely
00:01:18covered like that repeat the process get
00:01:22yourself a plate and repeat that with
00:01:26all the eggs so when I kept all the eggs
00:01:30first with the sausage meat then when
00:01:33you start panning them or coating them
00:01:35in the flour egg and breadcrumb mixture
00:01:38your hands are gonna get really mucky
00:01:40and you want to you don’t have to keep
00:01:42going back and forth between the two
00:01:44processes so it’s easier to coat them
00:01:47all on the sausage mix leave them to one
00:01:49side and then start with the messy
00:01:51process give your hands another wash dip
00:01:54them in the flour the egg and the bread
00:01:56crumbs and then what you’ll be left with
00:01:58lots of little Scotch eggs which you can
00:02:01just pop in your fridge in refrigerate
00:02:03and so you need to deep-fry them
00:02:07so to be completely covered up and I saw
00:02:11such joy in all the way around so you
00:02:14wanna wash your hands cuz you’re
00:02:16completely covered in sausage meat
00:02:17before you start the next process make
00:02:25some space and you want to do this in a
00:02:31conveyor belt style so make sure you’ve
00:02:33got your flour your whisk egg your
00:02:36beaten egg and your bread crumbs on a
00:02:38line so using one hand if you can so it
00:02:42can leave the other hand free and clean
00:02:43to pick up the eggs as you go gently
00:02:47coat the sausage coated eggs in a in a
00:02:52thin layer flour you don’t to go crazy
00:02:56shaking off any excess and then again
00:03:02same again into the beaten egg hold it
00:03:04up get rid of any drips and then same
00:03:12again into the bread crumbs just fold it
00:03:15around so you’ve got lovely coating hold
00:03:20it up get rid of any excess bread crumbs
00:03:22there you have it put it onto your tray
00:03:26or into Tupperware container so same
00:03:29again in the flour roll it around gently
00:03:35into the egg get any of the excess egg
00:03:40drip off otherwise it’s just gonna get
00:03:42really soggy so you just want to really
00:03:44like how to go back there and finally
00:03:48into the bread crumbs
00:03:54so now I definitely want to wash your
00:03:56hands again and there you have it mini
00:04:00Scotch eggs ready to deep-fry when your
00:04:03guests arrive or put them in a
00:04:05Tupperware container make sure they’re
00:04:07covered properly all you need to do then
00:04:09is heat some vegetable oil find them for
00:04:12a few minutes you don’t want to keep
00:04:14them in the fridge too long they or the
00:04:15egg will make the breadcrumb and the
00:04:17flour go soggy so you could do them in
00:04:19the morning
00:04:20so they’re ready to fry later on in the
